fresh beetroot to weight of 1.5kg, rinsed and finely chopped
2lbs onions, peeled and roughly chopped
1½lbs cooking apples, peeled and roughly chopped
½lb Demerara sugar
½ teaspoon ground ginger
1 pint Malt vinegar
1 tablespoon of salt
Mix all the ingredients together and cook in a large saucepan for 40-45 minutes.
Put into jars (prepared as for jam); should yield 7-8lbs of chutney, and keeps well.
